Dum Aloo

  Dum Aaloo😋   Dum Aloo (Hindi: दम आलू) is a potato based dish, which is traditionally cooked under pressure (Dum), is one of the well know veg preparation by Kashmiri Pandit. The potatoes used are smaller than the usual ones. They are deep fried first and then simmered over low flame in a spicy curd based gravy . This recipe is savoured throughout India along with indian breads and rice cooked for meals.   8-10 Nos. Baby potatoes  (with skin) 2 tbsp Oil ½ cup Tomato purée 1 No. Tomato Chopped 200 ml Water ½ tsp Ginger (grated) ½ tsp Garlic cloves (grated) 3 tbsp Sugar 1 tsp Salt 300 ml Curd (whisked) 2 tsp Honey ½ tsp Fennel Powder ½ tsp Kashmiri Chilli Powder to garnish Corriander Powder to deep fry Oil Whole spices :- 1 no. Green cardamom (seeds) 1 tsp Funnel Seeds 2 no. However, the scenario changed when I completed my hotel management degree and was being hired by a big multinational coffee giant. I used to not like drinking black coffee at first but since it was related to my work now, I had no choice. The first sip is always the most rancorous of all. Slowly, my palate started developing flavours for coffee. Now all I drink is black coffee to stay energetic and awake.  During this period I have learnt that coffee is a growing subject and creating awareness about it is the need of the hour. The Fairtrade Practise, Farmer-Customer Engagement are some of the topics which need to be covered and the awareness needs to be spread amongst our general audiences. Major Difference which people experience while brewing the same coffee at home is that they do not get the same taste
